Spring Salad Series
You loved the Fall Soup Series, so we’ve decided to bring you another recipe round-up for the next transitional season. Introducing: The Spring Salad Series. Salads are an ode to the light, delicate greens of spring. They make a delicious side that brings additional veggies to any meal, and with some extra thought (and a few extra ingredients) a salad can even be a full meal! They’re a great way to highlight the freshness of spring veggies!
Farro and White Bean Salad - Delish
First up is this Farro and White Bean Salad from Delish. It makes a great transitional dish, featuring some early spring and late winter veggies, and the beans and farro give it enough depth to be a full meal! Check the link in our bio for more.
Best Potato Salad - Love & Lemons
Our Spring Salad Series would not be complete without a classic potato salad. As we are patiently waiting for more leafy greens to be in season, potato salad is the perfect way to tide us over. The mayo, Greek yogurt dressing gives the potatoes an elevated creaminess, and the radishes add that springy crispness to balance everything out. What a perfectly springy side dish!
Beet Salad Recipe with Farro and Goat Cheese - Lake Shore Lady
Inspired by the beets we pulled from the ground on our recent visit to Regino’s Farm, this week’s recipe is a beet salad with farro and goat cheese. The farro gives it a nuttiness, the goat cheese provides creaminess, the beets have an earthiness, and the arugula balances everything out with its peppery flavor. This is a great option for a side or main spring dish!
Apple & Arugula Salad with Cider Vinaigrette - PCC
This salad is a great way to use the spring greens that you picked up at the markets over the weekend! The lightness of the arugula and vinaigrette makes for a great side dish to complement any meal.
Grilled Asparagus Salad with Lemon and Feta - Once Upon A Chef
Now that asparagus is back in the markets (thank you, Canales and Alvarez) we want to help you eat this springy green all season long! This super simple asparagus salad uses tangy lemon zest and briny feta to complement the asparagus spears. This is a perfect side dish for a high-protein meal like chicken or steak, or it makes a great lunch on the go!
Asparagus and Spring Onion Salad with Seven-Minute Eggs - Food & Wine
Spring onions and asparagus are probably the springiest veg we can think of, so combining them in this light salad makes perfect sense. Jammy eggs add protein, and everything is complemented with a tangy dressing and creamy whipped feta (find some from Stella Maris), ricotta, or labneh (Glendale Shepherd has some amazing labneh that would be perfect for this).
Another springy salad featuring Labne! This one is from J. Kenji Lopez-Alt via Serious Eats, so you know it’s going to be good! This salad is basically an ode to everything that spring has to offer, from broccolini to fava beans. Spring salads practically demand a light and citrusy vinaigrette, and this one is no different.
Burrata Salad - Delish
Memorial Day weekend kicks off BBQ season, so today’s spring salad is one to wow at your next backyard get-together. This burrata salad screams summer, but you can already find tomatoes and burrata at the markets so there’s no reason not to make it a spring salad! This salad is like an elevated version of the classic caprese and will leave your guests in awe of the creaminess of the burrata contrasted with the freshness of the tomatoes. Yum!
